Pomegranate Bellini

So it’s Sunday & time for brunch! Chloe’s parents gifted us a bottle of Dom Perignon the last time they visited which was in August 2016, so we have had this bottle forever. A mimosa would have been nice with brunch but I decided to change it up a little with the fresh pomegranate we had in stock and go for a Pomegranate Bellini. Quick & easy to make on a lazy Sunday afternoon. So here goes….

Ingredients:

  • 1 Bottle Champagne
  • 1 Pomegranate (You could use bottled pomegranate juice but I prefer freshly squeezed)
  • 1 Lemon

Other Items:

  • Muslin cloth
  • Strainer

Method:

Separate the pomegranate seeds. Take a handful and place in a muslin cloth.

Gently squeeze the juice out of the seeds into a glass. Repeat a couple of times with a fresh handful of seeds until you have enough juice.

Pour juice into a champagne flute until about a quarter full. Top of with champagne and a squeeze of lemon to add some zing. Add a few pomegranate seeds to your cocktail and enjoy!!
