This healthy and tasty recipe is a good substitute for mashed potatoes and goes well with most proteins. I served the puree with 5 spice swordfish and it was absolutely incredible!
Ingredients:
- 1 medium sized cauliflower
- 2 tablespoon unsalted butter
- 2 cloves garlic
- 1 teaspoon smoked paprika
- ¼ gallon milk (preferable whole milk)
- Salt & Pepper to taste
INSTRUCTIONS
Wash, clean and separate the florets of cauliflower. Add butter in a casserole on medium heat and add the garlic and sautee. Add in the florets, milk, paprika, salt and pepper. The milk should be at about half the level of the cauliflower when the florets are all in one layer. If not you can add some water. Close the casserole and let the cauliflower cook. Be careful as sometimes the milk can rise when it boils. Once cooked, transfer to a food processor or use a blender to puree.
