Air Fried Potato Chops

(For 12 potato chops)

Growing up my mum often made potato chops (curried mince meat wrapped in mashed potato and deep or shallow fried) for an evening snack. I was craving these last month and decided to use my air fryer to “fry” the chops. My mother usually made a flatter shape but I decided to make them round and added a yogurt Raita dip for the chops. The most important thing is to make the mince mix dry and to use older potatoes so they don’t split when you fry them!

Ingredients:

For the potato chop dough

  • 2 medium russet potato’s
  • 1/2 cup Parmesan cheese
  • Salt and pepper to taste
  • 1/2 teaspoon paprika
  • 1/2 cup fresh cilantro finely chopped
For the filling
  • 1/2 pound veal mince
  • 1 small shallot chopped
  • 1 small tomato chopped
  • 1 clove garlic minced
  • 1 inch ginger fresh minced
  • 1/2 tsp turmeric powder
  • 1 tsp cumin powder
  • 2 tsp coriander powder
  • 1 tsp paprika
  • 1/4 tsp all spice powder
  • 2 tablespoon apple cider vinegar
  • Salt and pepper to taste
To fry
  • 2 eggs beaten with a little salt
  • Breadcrumbs

Method:

For the potato chop dough

Boil the potatoes in a medium vessel filled with water till fully cooked. Peel and mash well. Add salt, pepper, parmesan, paprika and cilantro and mix well. Set aside.

For the filling: (can be done while the potatoes are cooking)
In a saucepan on medium heat add 2 tablespoon of olive oil. Add the onion, ginger and garlic and sautéed well with a little salt till onions turn golden brown. Add turmeric and tomatoes and cook well till all the moisture from the tomatoes evaporates. Add all the remaining spices and the veal mince and cook till the mix is dry. This is important as having a runny filling will not set the potato chop and they will crack when frying.
Take a hand full of the potato dough and flatten in your palm. Place a tablespoon of the mince mix at the center and gently fold the potato dough over to evenly cover. Place the ball aside and do the same with the rest of the dough. Now dip the ball in beaten eggs then breadcrumbs and air fry for about 10-15 minutes till golden brown!
Serve hot with a yogurt, cilantro dip or keep it simple with ketchup!
