Crispy Okra

Very quick and easy. This healthy recipe is our go to when friends come over to hang. Okra is one of the few vegetables I ate a lot growing up… and I was a very picky vegetable eater. Did not like my greens. But now I just devour it.

Chloe on the other hand discovered okra only when she lived in Brazil and instantly fell in love with it. Try this recipe out as a quick snack when you do not have much time and want to impress your guests.

Tip – Be generous with the spices you add to the dish. As the okra cooks in the oven and turns crispy some of the spices fall off in the baking tray.

Ingredients:

  • 1 pound fresh okra
  • 2 tablespoon coriander powder
  • 1 tablespoon cumin powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground pepper
  • 3 tablespoon lime juice
  • 1 teaspoon fine salt
  • ½ teaspoon chaat masala

Method:

Preheat oven to 400 F.

Wash and pat dry the okra. Cut the okra lengthwise and add to a baking tray. Add the spices mentioned and mix so that the okra is well coated. Add 2 tablespoon of the lime juice.

Place the baking tray in the oven and cook okra for ten minutes. Take out of the oven and stir okra adding the last tablespoon of lime juice.

Switch oven to broil and place tray back in oven. Broil for around ten minutes or until there is a slight charring on the okra. This indicated that the okra will be slightly crispy when it cools down a little. Move okra to a serving bowl, sprinkle with a dash of chaat masala and serve!
