Before I moved to NYC, the first few years of my life in America were spent in Atlanta. You can imagine that southern food had quite an influence on my palate. Dedicating this month of September to beautiful southern wholesome cuisine. This first recipe coming your way is Spiced Fried Chicken Lollipops!! The reason I decided to go with chicken wing lollipops instead of the usual fried chicken breast or leg was because I grew up in India eating chicken lollipops with a unique Szechuan sauce that is found on menus in Indian-Chinese restaurants. I wanted to try a twist to the traditional southern fried chicken.

The most popular among Spanish cocktails is obviously the Sangria. Traditionally made with red wine and chopped fruit, this alcoholic punch has gone through various experiments with red wine, orange juice, brandy etc. However, not a lot of people have heard of Zurracapote. This drink is similar to sangria in many ways and typical to the La Rioja and nearby areas of Spain. This drink can be had warm or chilled which is perfect for year round drinking!! We had some friends over to watch the final episode of season 7 of Game of Thrones and a large carafe of chilled Zurracapote was gone in minutes!

Spanish-style Cauliflower Puree

Simple fresh ingredients make the best dishes. Bought cauliflower to try out a Spanish recipe. I didn’t want to make the traditional “coliflor con almendras” recipe so I tried something different. Squid Ink Seafood Fideos

We just absolutely had to add this fideos recipe to Spanish cuisine month. This is one of my favorite dishes to cook though time consuming. The first time I made this dish was when Chloe’s mother sent us a package from France with a bottle of squid ink as she knew I was so totally into cooking! It’s been one of our favorites ever since. This dish I would say is a sister of paella but takes lesser time to prepare. A lot of recipes keep fideos a little soupy but I prefer it dry almost similar to a paella with the socarrat slightly burnt, crispy bottom.

Patatas Bravas Tower

Patatas bravas is probably the most popular among the Spanish tapas and is ordered widely in restaurants. What you love about this dish is the crispy outside and the warm soft center of the potatoes. I wanted to try my own variation of this dish after Chloe pushed me to think out of the box. I decided to add to this dish with thyme and interspersed potato chips for an additional crisp. The cut of the potatoes was also changed for refinement. Hope you all try and love this!
